    Preheat the oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced onions with a pinch of salt and cook, stirring occasionally, for about 20-25 minutes until golden brown and caramelized.

    Roast the Peppers

    While the onions are caramelizing, slice the sweet bell peppers. In another skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced peppers and sauté for 8-10 minutes until they are tender and slightly charred.

    Season the prime strip loin with salt and black pepper. In a hot skillet or grill, sear the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for 5 minutes before shaving into thin strips.

    On a serving platter, arrange the shaved prime strip loin, topped with caramelized onions, roasted sweet peppers, and a generous crumble of gorgonzola cheese. Squeeze the roasted garlic cloves over the top for added flavor.
