    Make the Cheesecake

    Preheat the oven to 325°F (160°C). In a large mixing bowl, blend the cream cheese and baby goat cheese until smooth. Add sugar and mix well. Incorporate eggs one at a time, followed by vanilla extract and heavy cream. Pour the mixture into a greased springform pan. Bake for 45-50 minutes until set. Let cool and refrigerate for at least 4 hours.

    Prepare the Gelato

    In a saucepan, heat the milk and sugar over medium heat until warm. Whisk in the honey and chopped pistachios. In a separate bowl, whisk the egg yolks. Gradually add the warm mixture to the yolks, whisking continuously. Pour back into the saucepan and cook until thickened. Chill and churn in an ice cream maker according to the manufacturer's instructions.

    Make the Oat Crumble

    In a mixing bowl, combine rolled oats, brown sugar, flour, melted butter, and salt. Mix until crumbly. Spread on a baking sheet and bake at 350°F (175°C) for about 15 minutes until golden brown. Let cool.

    Prepare the Blackberry Garnish

    In a bowl, toss fresh blackberries with powdered sugar and let sit for 10 minutes to macerate.

    Assemble the Dish

    Slice the chilled cheesecake and serve on plates. Top with oat crumble, a scoop of toasted honey & pistachio gelato, and garnish with the macerated blackberries.
