Biscotti Ingredients
Method
Biscotti Preparation
- 1
Prepare the Dough
In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well. In a separate bowl, whisk together the eggs and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until combined. Fold in the chopped almonds, dried cranberries, and chocolate chips.
- 2
Shape the Biscotti
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Divide the dough into two equal portions and shape each portion into a log about 12 inches long and 2 inches wide on the prepared baking sheet.
- 3
Bake the Logs
Bake the logs in the preheated oven for 25-30 minutes, or until they are lightly golden and firm to the touch. Remove from the oven and let cool for about 10 minutes.
- 4
Slice and Bake Again
Using a serrated knife, slice the baked logs diagonally into 1-inch thick pieces. Arrange the slices cut-side down on the baking sheet. Return to the oven and bake for an additional 15-20 minutes, until the biscotti are golden and crisp.
- 5
Cool and Serve
Allow the biscotti to cool completely on a wire rack before serving. Enjoy with coffee or tea!
