Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

    Mix Ingredients

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.

    Knead Dough

    Mix until a dough forms, then turn it out onto a floured surface. Knead for about 8-10 minutes until the dough is smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours or until it has doubled in size.

Assembling the Pizza

    Preheat Oven

    Preheat your oven to 475°F (245°C) and place a pizza stone inside if you have one.

    Prepare Dough

    Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out to your desired thickness.

    Add Sauce and Cheese

    Transfer the rolled dough to a pizza peel or baking sheet. Tear the fresh mozzarella into smaller pieces and evenly distribute them over the dough.

    Add Tomatoes and Seasoning

    Slice the fresh tomatoes and arrange them on top of the mozzarella. Drizzle with olive oil and season with salt and black pepper.

    Bake Pizza

    Carefully transfer the pizza to the preheated oven (or onto the pizza stone) and bake for 10-15 minutes, or until the crust is golden and the cheese is bubbling.

    Garnish with Basil

    Once out of the oven, immediately top with fresh basil leaves. Let it cool for a few minutes before slicing.
