Pasta Preparation
Cook the Spaghetti
In a large pot of boiling salted water, add the spaghetti and cook according to package instructions until al dente (about 8-10 minutes). Reserve 1 cup of pasta water, then drain the spaghetti.
Sauce Preparation
Prepare the Egg Mixture
While the pasta is cooking, in a mixing bowl, whisk together the eggs, grated Pecorino Romano cheese, and freshly ground black pepper until well combined. Set aside.
Pancetta Preparation
Cook the Pancetta
In a large skillet over medium heat, add the diced pancetta. Cook until crispy and golden brown, about 5-7 minutes. Remove from heat and set aside.
Combining Ingredients
Combine Pasta and Pancetta
Once the spaghetti is drained, add it to the skillet with the cooked pancetta. Toss to combine and ensure the spaghetti is well coated with the pancetta fat.
Serve
Serve immediately, garnished with additional grated Pecorino Romano cheese and more freshly ground black pepper, if desired.
