Stuffed Calamari

Method

Preparing the Filling

1

Mix the Ingredients

In a large bowl, combine the chopped black olives, toasted bread crumbs, golden raisins, minced garlic, grated Parmigiano Reggiano, olive oil, salt, black pepper, and chopped parsley. Mix well until all ingredients are evenly blended.

Stuffing the Calamari

2

Prepare the Calamari

Rinse the calamari tubes under cold water and pat them dry with paper towels. Ensure that the insides are clean.

3

Fill the Tubes

Using a small spoon or a piping bag, carefully stuff each calamari tube with the prepared filling, ensuring not to overfill them as they will expand while cooking. Seal the open ends with toothpicks or kitchen twine.

Cooking the Stuffed Calamari

4

Cook the Calamari

In a large skillet, heat a drizzle of olive oil over medium heat. Once hot, add the stuffed calamari and cook for about 3-4 minutes on each side, or until golden brown and cooked through.

5

Serve

Remove the calamari from the skillet and let them rest for a few minutes. Slice into rings and serve warm, garnished with additional chopped parsley if desired.
