Cool the Milk
Remove the saucepan from heat and allow the milk to cool down to about 110°F (43°C). You can use a thermometer to check the temperature.

Add Yogurt Starter
In a small bowl, mix the plain yogurt with a few tablespoons of the cooled milk until smooth. Then, whisk this mixture back into the saucepan with the rest of the cooled milk.

Ferment the Yogurt
Cover the saucepan with a lid or a clean towel and place it in a warm environment (like an oven with the light on or a yogurt maker) for 6-12 hours. The longer it ferments, the tangier the yogurt will be.

Add Vanilla (if desired)
After fermentation, if you want vanilla yogurt, stir in the vanilla extract and sweetener (if using) to taste.
