Prepare the Onion Soup

    Caramelize the Onions

    In a large pot, melt butter and olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 30-40 minutes until they are caramelized and golden brown.

    Add Garlic and Broth

    Add minced garlic to the pot and cook for an additional 2 minutes. Pour in the beef broth and white wine. Add thyme, bay leaves, salt, and black pepper. Bring to a simmer and let cook for 20 minutes.

Prepare Toppings

    Prepare the Croutons

    While the soup simmers, prepare croutons by toasting them in the oven until golden brown.

    Mix the Cheeses

    In a bowl, mix Swiss and Parmesan cheese together. Set aside.

Make Garlic Toast

    Prepare the Bread

    Slice the French bread in half lengthwise. Spread softened butter on each half and sprinkle with garlic powder.

    Toast the Bread

    Toast the bread in the oven at 350°F (175°C) until golden brown.

Assemble and Serve

    Ladle the soup into bowls, top with croutons and cheese mixture, and place under the broiler until the cheese is bubbly and golden. Serve with garlic toast on the side.
