Prepare the Filling
In a large mixing bowl, combine the ground chicken, chopped carrot, chopped cabbage, green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly combined.

Fill the Dumplings
Place a dumpling wrapper on a clean surface. Spoon about 1 tablespoon of the filling mixture into the center of the wrapper. Moisten the edges of the wrapper with a little water, fold it in half, and pinch the edges to seal. Repeat with remaining wrappers and filling.

Cook the Dumplings
You can either steam, boil, or pan-fry the dumplings. To steam, place them in a steamer basket lined with parchment paper and steam for about 10-12 minutes. To boil, cook them in boiling water for about 5-7 minutes. To pan-fry, heat a little oil in a skillet, add the dumplings, and fry until golden brown on the bottom, then add a splash of water, cover, and steam until cooked through.

Prepare the Sauce
Serve the dumplings with sweet chili sauce for dipping. You can buy it pre-made or mix sweet chili sauce with a dash of soy sauce for an extra kick.
