Prepare the Batter
In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar. In another bowl, combine the buttermilk, eggs, melted butter, and vanilla extract. Mix the wet ingredients into the dry ingredients until just combined; do not overmix.

Cook the Pancakes
Preheat a non-stick skillet or griddle over medium heat. Once hot, pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown on the other side, about 1-2 minutes more.

Serve
Stack the pancakes on a plate, dust with icing sugar, and serve with maple syrup or simple syrup drizzled on top.
