Steak and Eggs Ingredients

Method

Cooking Directions

  1. 1

    Marinate the Steak

In a bowl, combine olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Coat the skirt steak with the marinade and let it sit for at least 30 minutes.

  2. 2

    Cook the Potatoes

While the steak is marinating, preheat the oven to 425°F (220°C). Toss the breakfast potatoes with olive oil, salt, and pepper, then spread them on a baking sheet. Roast for about 25-30 minutes or until golden and crispy.

  3. 3

    Grill the Steak

Preheat a grill or grill pan over medium-high heat. Grill the marinated skirt steak for about 4-5 minutes per side, or until it reaches your desired doneness. Remove from heat and let it rest for a few minutes before slicing.

  4. 4

    Cook the Eggs

In a skillet over medium heat, cook the eggs to your liking (fried, scrambled, etc.). Season with salt and pepper.

  5. 5

    Warm the Tortillas

Warm the corn or flour tortillas in a dry skillet or directly over the flame for a few seconds on each side until pliable.

  6. 6

    Assemble the Dish

On a plate, serve the sliced skirt steak alongside the eggs, roasted breakfast potatoes, and refried beans. Serve with warm tortillas on the side.
