Marinating the Steak

Prepare the marinade

In a bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Mix well.

Marinate the steak

Place the skirt steak in a resealable bag or shallow dish and pour the marinade over it. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.

Cooking the Fajitas

Prepare the vegetables

Slice the bell peppers and onion into thin strips.

Grill the steak

Preheat the grill to medium-high heat. Remove the steak from the marinade and grill for about 4-6 minutes per side for medium-rare, or until desired doneness. Remove from the grill and let rest for 5 minutes before slicing.

Grill the veggies

While the steak is resting, toss the sliced bell peppers and onion in a bit of olive oil, salt, and pepper, then grill for about 5-7 minutes until tender and slightly charred.

Warm the tortillas

Warm the tortillas on the grill for about 30 seconds on each side or until soft.

Assembling and Serving

Assemble the fajitas

Slice the grilled steak against the grain into strips. To assemble, layer rice, black beans, grilled veggies, and steak on the tortillas. Top with cheese, guacamole, sour cream, and pico de gallo.

Serve immediately with any additional toppings you like.
