Instructions

  1. 1

    Prepare the Chicken

In a large pot, heat the olive oil over medium heat. Add the diced chicken breast and sauté until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

  2. 2

    Sauté the Vegetables

In the same pot, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

  3. 3

    Add Chiles and Seasoning

Stir in the roasted green chiles, cumin, salt, and black pepper. Cook for 2-3 minutes to let the flavors meld.

  4. 4

    Combine Broth and Chicken

Pour in the chicken broth and bring the mixture to a boil. Reduce heat and add the sautéed chicken back to the pot. Let it simmer for 15-20 minutes.

  5. 5

    Prepare Tortillas

While the soup is simmering, warm the flour or corn tortillas in a dry skillet or wrap them in foil and heat them in the oven.

  6. 6

    Serve

Ladle the soup into bowls and serve hot with lime wedges and fresh cilantro for garnish, alongside the warm tortillas.
