Preparation
Wash and chop all the vegetables into bite-sized pieces.

Sautéing
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the red onion and sauté for 2-3 minutes until it starts to soften.

Adding Vegetables
Add zucchini, yellow squash, and bell pepper to the skillet. Sauté for another 5-7 minutes until the vegetables are tender but still crisp.

Finishing Touch
Stir in cherry tomatoes and minced garlic. Cook for an additional 2-3 minutes until the tomatoes are slightly blistered and garlic is fragrant.

Seasoning
Season with salt and pepper to taste. Serve warm.
