Prepare the Chicken
In a large skillet, heat the olive oil over medium heat. Add the diced onion, garlic, and bell pepper, and sauté until softened, about 5 minutes.

Cook the Chicken
Add the chicken breasts to the skillet and season with salt and pepper. Cook until the chicken is fully cooked, about 7-10 minutes. Remove from heat and shred the chicken using two forks.

Assemble the Enchiladas
Preheat the oven to 350°F (175°C). In a large baking dish, spread a thin layer of enchilada sauce on the bottom. Take each corn tortilla and fill with shredded chicken, a sprinkle of cheese, and a little cilantro. Roll up the tortilla and place it seam-side down in the baking dish.

Add Sauce and Cheese
Once all tortillas are in the baking dish, pour the remaining enchilada sauce over the top. Sprinkle with the remaining cheese.

Bake
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Serve
Remove from the oven and let cool for a few minutes. Garnish with additional cilantro before serving.
