    Remove the peppers from the oven and place them in a bowl. Cover with plastic wrap and let them steam for about 10 minutes. This will make it easier to peel off the skin. Once cooled, peel the skin off and carefully make a slit on one side of each pepper to remove the seeds.

    Stuff each pepper with about 1/3 cup of Monterey Jack cheese, ensuring they are filled but not overflowing.

    In a mixing bowl, beat the eggs until frothy. In another bowl, combine the flour, baking powder, and salt. Gradually fold the dry ingredients into the beaten eggs until a batter forms.
