1. Prepare the Tortillas
If using store-bought tortillas, skip this step. For house-made tortillas, mix flour, salt, and water to form a dough. Roll out into thin circles and cook on a skillet until lightly browned on each side.
2. Assemble the Quesadillas
On one half of each tortilla, layer a generous amount of shredded cheese, followed by pico de gallo. Fold the tortillas in half to cover the filling.
3. Cook the Quesadillas
Heat olive oil or butter in a skillet over medium heat. Cook each folded quesadilla for about 3-4 minutes on each side, or until the cheese is melted and the tortillas are golden brown.
4. Serve
Cut the quesadillas into wedges and serve hot with guacamole and sour cream on the side.
