Making Ice Cream

Prepare the Base
In a mixing bowl, whisk together the heavy cream, whole milk, sugar, vanilla extract, and a pinch of salt until the sugar is dissolved.

Chocolate Version Preparation
For the Mexican chocolate variant, melt the Mexican chocolate in a double boiler or microwave, then stir in the cinnamon. Mix this into the prepared base.

Chill the Mixture
Cover the mixture and refrigerate for at least 2 hours or until thoroughly chilled.

Churn the Ice Cream
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions, typically about 20-25 minutes until thickened.

Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.
