Heat vegetable oil in a skillet over medium heat. Once hot, fry the corn tortillas for about 1-2 minutes on each side until they are crispy. Remove and drain on paper towels.

Prepare the Corn Tortillas

In the same skillet, reduce the heat to low. Crack the eggs into the skillet and cook them over-easy for about 3-4 minutes, or until the whites are set but the yolks are still runny.

Cook the Eggs

On each crispy tortilla, spread ½ cup of refried beans. Top each with a cooked egg and pour ½ cup of Rio's signature ranchero sauce over the top.
