    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Cook Filling

    In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent (about 3-4 minutes). Stir in chopped spinach and cook until wilted. Add crab meat and shrimp, cumin, salt, and pepper. Mix well and cook for another 2-3 minutes. Remove from heat and stir in cream cheese until melted and fully combined.

    Assemble Enchiladas

    Spread a thin layer of enchilada sauce on the bottom of a baking dish. Take a corn tortilla, add about 1/4 cup of the filling, roll it up, and place it seam-side down in the baking dish. Repeat with remaining tortillas and filling.

    Top with Sauce and Cheese

    Pour the remaining enchilada sauce over the rolled enchiladas. Sprinkle shredded cheese on top.

    Bake

    Cover the dish with foil and bake in the preheated oven for 20 minutes. Remove foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

    Let the enchiladas cool for a few minutes before serving. Enjoy your flavorful enchiladas!
