Prepare the Dough
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Add the vegetable oil and mix until crumbly. Gradually add water, kneading until a smooth dough forms. Cover with a towel and let it rest for 30 minutes.

Roll Out the Dough
After resting, divide the dough into 10 equal pieces. Roll each piece into a thin circle (about 1/8 inch thick) on a lightly floured surface.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium heat until it reaches 375°F (190°C).

Fry the Sopapillas
Carefully place one dough circle into the hot oil. Fry for about 1-2 minutes on each side, or until golden brown and puffy. Remove and drain on paper towels.

Add Cinnamon Sugar
In a small bowl, mix the granulated sugar and ground cinnamon. While the sopapillas are still warm, sprinkle the cinnamon sugar mixture over them generously.
