Prepare the Jalapeños
Slice the jalapeños in half lengthwise and remove the seeds if you prefer less heat. Set aside.

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Gradually whisk in the ice-cold water until the batter is smooth and thick.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Jalapeños
Dip each jalapeño half into the batter, allowing excess to drip off. Carefully place them into the hot oil in batches, frying until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

While the jalapeños are frying, cut the fresh veggies into sticks or bite-sized pieces for serving.
