Make the Sauce
In a saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another minute. Add tomato sauce, chili powder, cumin, salt, black pepper, and water. Mix well and let simmer for 10 minutes.

Prepare the Filling
In a bowl, combine the crab meat, shrimp, and shredded jack cheese. Mix until evenly combined.

Assemble the Enchiladas
Preheat your oven to 180°C (350°F). Take a corn tortilla, add a generous amount of the crab and shrimp filling, roll it up and place it seam-side down in a greased baking dish. Repeat with the remaining tortillas.

Add Sauce and Bake
Pour the prepared enchilada sauce over the rolled tortillas in the baking dish. Sprinkle any remaining jack cheese on top. Bake for 20-25 minutes or until the cheese is melted and bubbly.
