    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Boil them in salted water for about 8-10 minutes until they are just tender. Drain and set aside.

    Cook the Chorizo

    In a large skillet, heat the olive oil over medium heat. Add the chorizo, breaking it up with a spatula, and cook until browned and cooked through, about 5-7 minutes.

    Sauté the Vegetables

    Add the diced onion, bell pepper, and minced garlic to the skillet. Sauté for about 3-4 minutes until the vegetables are softened.

    Combine Ingredients

    Add the boiled potatoes to the skillet along with paprika, salt, and black pepper. Stir everything together and cook for another 5-7 minutes until the potatoes start to get crispy.

    Cook the Eggs

    In a separate pan, cook the eggs to your liking (fried, poached, or scrambled).

    Plate the chorizo and potato hash and top with the cooked eggs. Serve hot.
