    Prepare the Poached Eggs

    Bring a pot of water to a gentle simmer. Crack the eggs into small bowls, then gently slide them into the simmering water. Cook for about 3-4 minutes for a soft poach. Remove with a slotted spoon and set aside.

    Heat the Salsa

    In a large skillet over medium heat, warm the Salsa Roja or Salsa Verde until it starts to bubble.

    Add Corn Chips

    Add the corn chips to the skillet and gently toss to coat them in the salsa. Cook for 1-2 minutes until the chips are slightly softened.

    Add Cheeses

    Sprinkle the shredded jack cheese and crumbled cotija cheese over the top, allowing it to melt slightly.

    Serve

    Divide the chilaquiles onto plates. Top each portion with a poached egg, a drizzle of Mexican-style crema, and a sprinkle of chopped cilantro. Season with salt and pepper to taste.
