Make the Tortillas
In a large bowl, mix flour and salt. Slowly add water until a dough forms. Knead for 5 minutes until smooth. Divide into 8 equal balls and let rest for 30 minutes. Roll each ball into a thin circle and cook on a hot skillet for 1-2 minutes on each side until lightly browned.

Prepare the Esquite
Boil sweet corn kernels in salted water for 5-7 minutes until tender. Drain and mix with chopped arbol chilies, lime juice, and salt to taste. Set aside.

Assemble the Tacos
Take a cooked tortilla and add a generous amount of arbol esquite. Top with pickled onions, crumbled cotija cheese, and fresh cilantro. Serve immediately.
