Peel and thinly slice the red onions. You can use a mandoline or a sharp knife for even slices.

Make the Pickling Liquid

In a saucepan, combine the apple cider vinegar, water, sugar, salt, black peppercorns, garlic, and bay leaf. Bring the mixture to a simmer over medium heat, stirring until the sugar and salt dissolve.

Place the sliced onions in a clean jar and pour the hot pickling liquid over the onions. Ensure the onions are fully submerged. Allow the mixture to cool to room temperature.

Once cooled, cover the jar with a lid and refrigerate for at least 1 hour, preferably overnight, to allow the flavors to meld.
