    Prepare the Sweet Tea

    Boil 4 cups of water in a pot. Once boiling, add 1 cup of sugar and stir until dissolved. Add the tea bags and let steep for about 15 minutes. Remove the tea bags and let the sweet tea cool to room temperature.

    Combine and Ferment

    In a clean glass jar, pour the cooled sweet tea. Add 1 cup of starter tea and gently place the SCOBY on top. Cover the jar with a clean cloth or coffee filter secured with a rubber band to allow airflow while keeping contaminants out.

    Fermentation Process

    Let the kombucha ferment at room temperature for about 7 to 14 days, depending on your taste preference. Check periodically; when it reaches your desired level of tanginess, it’s ready for the next step.

    Bottling

    Remove the SCOBY and reserve it for your next batch. Pour the kombucha into bottles, leaving about an inch of headspace. You can add flavors at this stage, such as ginger, fruit, or herbs if desired.

    Second Fermentation (Optional)

    Seal the bottles tightly and let them sit at room temperature for another 3 to 7 days to carbonate. Afterward, refrigerate the bottles to halt fermentation.

    Pour your house-made kombucha into a glass and enjoy your refreshing beverage!
