Prepare the Baking Dish

Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.

Melt the Chocolate

In a medium saucepan, melt the dark chocolate chips and coconut oil over low heat, stirring continuously until smooth. Remove from heat and let cool slightly.

Mix the Ingredients

In a large bowl, combine the gluten-free rolled oats, maple syrup, peppermint extract, and a pinch of salt. Pour in the melted chocolate mixture and stir until well combined.

Bake the Bars

Spread the mixture evenly into the prepared baking dish and press it down firmly. Bake in the preheated oven for 20-25 minutes or until the edges are slightly golden.

Cool and Cut

Remove from the oven and let cool in the pan for at least 10 minutes. Use the parchment paper overhang to lift the bars out and transfer them to a cutting board. Cut into squares or bars.
