Meatloaf Preparation

Preheat Oven
Preheat your oven to 350°F (175°C).

Mix Meatloaf Ingredients
In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, eggs, milk, chopped onion, minced garlic, chili powder, cumin, salt, black pepper, and diced red or green chile. Mix until well combined.

Shape Meatloaf
Transfer the meat mixture into a loaf pan or shape it into a loaf on a lined baking sheet.

Add Cheese
Sprinkle the shredded cheese on top of the meatloaf.

Bake Meatloaf
Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (70°C).
Jalapeno Hollandaise Preparation

Prepare Hollandaise Sauce
In a medium bowl, whisk together the egg yolks and lemon juice until light and frothy.

Add Butter
Slowly drizzle in the melted butter while continuing to whisk until the sauce is thick and creamy.

Add Jalapeno and Season
Stir in the finely chopped jalapeno, salt, and black pepper. Set aside.
Beans & Potatoes Preparation

Heat Beans
In a small saucepan, heat the canned black beans over medium heat until warmed through.
Final Assembly

Serve
Slice the meatloaf and serve it on a plate topped with jalapeno hollandaise, alongside the sautéed potatoes and warm black beans.
