Preparation

    Prepare the Protein

    Choose your protein: ground beef, shredded chicken, or shrimp. If using chicken, boil the chicken breast in water until cooked through, then shred it. For shrimp, peel and devein them.

    Cook the Ground Beef

    In a skillet over medium heat, add the ground beef and cook until browned. Drain excess fat. Season with chili powder, garlic powder, cumin, and salt. Mix well and set aside.

Assembly

    Prepare the Tortillas

    In a separate skillet, lightly fry the corn tortillas for about 10-15 seconds on each side, just until softened. This makes them easier to roll.

    Fill the Tortillas

    Spread a spoonful of the protein mixture (beef, chicken, or shrimp) evenly on each tortilla, then roll them up tightly.

Cooking

    Arrange and Cover

    Place the rolled tortillas seam-side down in a greased baking dish. Pour the red enchilada sauce evenly over the top.

    Add Cheese and Bake

    Sprinkle shredded cheese over the top and bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the cheese is melted and bubbly.

Serving

    Garnish and Serve

    Once out of the oven, let the enchiladas cool for a few minutes. Top with sour cream, chopped green onions, and fresh cilantro before serving.
