Method
Cooking the Top Sirloin

Prepare the Steak
Season the top sirloin steaks with salt and black pepper on both sides.

Pan Fry the Steak
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the steaks and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

Rest the Steak
Remove the steaks from the skillet and let them rest for 5 minutes before slicing.

Making the Peppercorn Whiskey Lime Sauce

Combine Ingredients
In a small saucepan, combine the whiskey, lime juice, and whole black peppercorns. Bring to a simmer over medium heat.

Add Cream and Butter
Once the liquid has reduced by half, add the heavy cream and butter. Stir and simmer for an additional 5 minutes until the sauce thickens slightly.

Strain the Sauce
Remove from heat and strain the sauce through a fine-mesh sieve to remove the peppercorns. Keep warm.
Preparing Rich's Salad

Prepare the Vegetables
In a large bowl, combine the mixed greens, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.

Dress the Salad
In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, 1 teaspoon of salt, and 1 teaspoon of black pepper. Drizzle over the salad and toss to combine.
Serving

Plate the Dish
To serve, place a grilled portabella mushroom on each plate, top with sliced top sirloin steak, and drizzle with the peppercorn whiskey lime sauce. Serve with a side of Rich's salad.
