Top Sirloin

Grilled Portabella Mushrooms

Peppercorn Whiskey Lime Sauce

Method

Cooking the Top Sirloin

  1. 1

    Prepare the Steak

Season the top sirloin steaks with salt and black pepper on both sides.

  2. 2

    Pan Fry the Steak

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the steaks and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

  3. 3

    Rest the Steak

Remove the steaks from the skillet and let them rest for 5 minutes before slicing.

Grilling Portabella Mushrooms

  1. 4

    Prepare the Mushrooms

Clean the portabella mushrooms and remove the stems. In a bowl, combine balsamic vinegar, garlic powder, and 1 tablespoon of olive oil. Brush the mixture onto both sides of the mushrooms.

  2. 5

    Grill the Mushrooms

Preheat a grill or grill pan over medium heat. Grill the portabella mushrooms for about 5-7 minutes per side, or until tender and slightly charred.

Making the Peppercorn Whiskey Lime Sauce

  1. 6

    Combine Ingredients

In a small saucepan, combine the whiskey, lime juice, and whole black peppercorns. Bring to a simmer over medium heat.

  2. 7

    Add Cream and Butter

Once the liquid has reduced by half, add the heavy cream and butter. Stir and simmer for an additional 5 minutes until the sauce thickens slightly.

  3. 8

    Strain the Sauce

Remove from heat and strain the sauce through a fine-mesh sieve to remove the peppercorns. Keep warm.

Preparing Rich's Salad

  1. 9

    Prepare the Vegetables

In a large bowl, combine the mixed greens, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.

  2. 10

    Dress the Salad

In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, 1 teaspoon of salt, and 1 teaspoon of black pepper. Drizzle over the salad and toss to combine.

Serving

  1. 11

    Plate the Dish

To serve, place a grilled portabella mushroom on each plate, top with sliced top sirloin steak, and drizzle with the peppercorn whiskey lime sauce. Serve with a side of Rich's salad.
