Method
Prepare the Pork Chop

Stuff the Pork Chops
Using a sharp knife, make a pocket in each pork chop. Stuff each pocket with an equal amount of Schreiner's spicy chorizo.

Season the Chops
Rub the outside of each stuffed pork chop with olive oil, salt, and black pepper.

Prepare the Pinto Beans

Sauté the Vegetables
In a medium saucepan, heat a tablespoon of olive oil over medium heat. Add diced onion and minced garlic, and sauté until translucent, about 3-4 minutes.

Plate the Dish
On each plate, place a generous scoop of the pinto beans, top with the grilled pork chop, and finish with a spoonful of cilantro mango salsa on top.
