Cook the Meats
In a large skillet over medium heat, crumble and cook the Schreiner's sausage and chorizo until browned and cooked through, about 8-10 minutes. Stir occasionally to ensure even cooking.

Prepare the Cheese Mixture
In a separate saucepan, combine the cheddar cheese, Monterey Jack cheese, cream cheese, and milk over low heat. Stir continuously until all the cheeses are melted and the mixture is smooth and creamy, about 5-7 minutes.

Combine Ingredients
Once the meats are cooked, drain excess grease and add them to the cheese mixture. Stir in the sliced jalapeños, and season with salt and black pepper. Mix well to combine all ingredients.

Serve the Queso
Transfer the queso to a serving bowl and garnish with chopped green onions and cilantro. Serve warm with tortilla chips for dipping.
