    Prepare the Sweet Onions

    Preheat your wood oven to 400°F (200°C). Slice the sweet onions into thick rounds and toss them with olive oil, salt, and black pepper in a mixing bowl.

    Roast the Onions

    Place the seasoned onion rounds on a baking sheet and roast in the wood oven for about 20-25 minutes, or until they are tender and caramelized, turning halfway through.

    Cook the Pinto Beans

    While the onions are roasting, rinse the pinto beans under cold water. In a small pot, add the beans and cover them with water. Bring to a boil, then reduce to a simmer and cook for about 30-40 minutes until tender. Drain and set aside.

    Grill the Sausages

    Heat a grill or grill pan over medium heat. Grill the jalapeno cilantro pork sausages for about 6-8 minutes on each side, or until they are cooked through and have nice grill marks.

    Assemble the Dish

    On a serving plate, layer the roasted sweet onions, followed by the pinto beans. Top with the grilled sausages and garnish with fresh cilantro and lime wedges.
