    Prepare the Chorizo

    In a skillet over medium heat, add the chorizo and cook for about 5-7 minutes, breaking it apart with a spatula until it is fully cooked and browned. Drain excess fat if necessary.

    Sauté the Vegetables

    In the same skillet, add the chopped onion and cook for another 3-4 minutes until translucent. Then add the spinach and cook until wilted, about 2 minutes.

    Combine Ingredients

    Reduce the heat to low. Add cream cheese to the skillet and stir until melted and well combined with the chorizo, onion, and spinach.

    Add Cheeses and Spices

    Gradually add the cheddar and monterey jack cheeses to the mixture, stirring continuously until all the cheese is melted and the mixture is smooth. Add garlic powder, cumin, salt, and black pepper to taste, stirring to combine.

    Serve

    Transfer the con queso mixture to a serving bowl and serve it hot with tortilla chips on the side for dipping.
