Prepare the Ribs

    Preheat Oven

    Preheat your oven to 300°F (150°C).

    Prepare the Spice Rub

    In a bowl, mix together the chipotle peppers in adobo sauce, brown sugar, paprika, garlic powder, onion powder, cumin, salt, and black pepper to create a spicy rub.

    Coat the Ribs

    Pat the pork ribs dry with paper towels. Rub the spice mixture generously over the ribs, making sure to cover all sides.

    Bake the Ribs

    Place the coated ribs on a baking sheet lined with aluminum foil. Cover with another piece of foil and bake for 2.5 to 3 hours, until tender.

Prepare the Dirty Rice

    Cook the Rice

    In a medium saucepan, bring the chicken broth to a boil. Add the long grain rice and bay leaf, reduce heat to low, cover, and simmer for about 18-20 minutes until rice is tender and liquid is absorbed.

    Sauté the Vegetables and Meat

    In a large skillet over medium heat, add the ground beef and cook until browned. Drain any excess fat. Add the diced green bell pepper, onion, celery, and minced garlic to the skillet. Sauté until the vegetables are tender, about 5 minutes.

    Combine the Rice

    Once the rice is cooked, add it to the skillet with the meat and vegetables. Stir in the Cajun seasoning, salt, and black pepper. Mix well and cook for an additional 5 minutes, allowing the flavors to combine.

Finishing Touches

    Glaze the Ribs

    Once the ribs are tender, remove them from the oven. Brush with additional adobo sauce if desired and return to the oven uncovered for an additional 15-20 minutes to caramelize.
