Method
Preparation of Shrimp
- 1
Clean the Shrimp
Rinse the jumbo shrimp under cold water and pat them dry with paper towels. If they are not already deveined, use a knife to make a shallow cut along the back of each shrimp and remove the vein.
- 2
Season the Shrimp
In a small bowl, mix together the garlic powder, paprika, black pepper, and salt. Rub this seasoning mixture evenly over all of the shrimp.
- 3
Wrap with Bacon
Take each slice of bacon and wrap it around a seasoned shrimp, starting from the tail and moving towards the head. Secure the bacon with a toothpick if necessary.
Cooking the Shrimp
- 4
Preheat the Oven
Preheat your oven to 400°F (200°C).
- 5
Prepare Baking Sheet
Line a baking sheet with aluminum foil for easy cleanup. Place a rack on top of the baking sheet if available to allow the drippings to fall below.
- 6
Arrange Shrimp
Place the bacon-wrapped shrimp on the prepared baking sheet in a single layer. Drizzle with olive oil.
- 7
Bake the Shrimp
Bake in the preheated oven for about 15-20 minutes or until the bacon is crispy and the shrimp are cooked through. The shrimp should be opaque and slightly curled.
- 8
Rest and Serve
Remove the shrimp from the oven and let them rest for a few minutes. Serve with lemon wedges and your choice of dipping sauce.
Serving the Dish
- 9
Prepare the Plate
On a large serving platter, arrange the cooked white rice and black beans. Place the bacon-wrapped shrimp on top of the rice and beans.
- 10
Add Accompaniments
Add lemon wedges around the shrimp and a small bowl of dipping sauce in the center of the platter.
