    Prepare the Potatoes

    Peel the Yukon Gold potatoes and slice them into 1/4 inch thick rounds.

    Parboil the Potatoes

    In a large pot, bring salted water to a boil. Add the sliced potatoes and cook for about 5-7 minutes until slightly tender but not fully cooked. Drain and set aside.

    Cook the Onions

    In a large skillet, heat the butter and olive oil over medium heat. Add the thinly sliced onions and sauté until they are soft and golden brown, about 10-15 minutes. Remove from skillet and set aside.

    Sauté the Potatoes

    In the same skillet, add the parboiled potatoes in a single layer. Cook for about 5-7 minutes on each side until they are golden and crispy. You may need to do this in batches.

    Combine and Season

    Once the potatoes are crispy, return the cooked onions to the skillet. Add salt, black pepper, and chopped parsley. Toss everything together gently to combine.
