    Prepare the Ingredients

    Begin by slicing the beef sirloin into thin strips, about 1/4 inch thick. Slice the mushrooms and dice the onion. Mince the garlic cloves.

    Cook the Noodles

    In a large pot, bring salted water to a boil. Add the egg noodles and cook according to package instructions until al dente, then drain and set aside.

    Sauté the Beef

    In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Add the beef strips and season with salt and black pepper. Cook until browned on all sides, about 3-4 minutes. Remove the beef from the skillet and set aside.

    In the same skillet, add the remaining butter. Add the diced onions and minced garlic, cooking until the onions are translucent, about 3-4 minutes. Then add the sliced mushrooms and cook for an additional 5 minutes until the mushrooms are tender.

    Sprinkle the flour over the mushroom mixture and stir to combine. Pour in the beef broth while stirring continuously to prevent lumps. Bring the mixture to a simmer and let it thicken for about 5 minutes.

    Reduce the heat to low and stir in the sour cream until fully incorporated. Return the browned beef to the skillet and mix well to combine all ingredients. Allow to heat through for another 2-3 minutes.

    Serve the beef stroganoff over the cooked egg noodles. Garnish with fresh parsley if desired.
