Prepare the Beef Patties
In a large bowl, combine the ground beef with salt and half of the coarse black pepper. Mix gently until just combined. Form the mixture into two equal patties, making a slight indentation in the center of each patty. This helps them cook evenly.
Toast the Buns
While the patties are cooking, split the brioche buns in half and toast them in the skillet until golden brown. Remove and set aside.
Make the Sauce
In the same skillet, add the shallots and sauté for about 2 minutes until softened. Carefully pour in the brandy and allow it to reduce for a minute. Then, add the beef broth and remaining black pepper. Bring to a simmer and let it reduce for about 3-4 minutes until slightly thickened.
Add Cream
Stir in the cream and let it simmer for another 2-3 minutes, stirring occasionally until the sauce is creamy and well combined.
Assemble the Burgers
Place each beef patty on the bottom half of the toasted brioche bun. Spoon the creamy sauce generously over the patties, then sprinkle with fresh parsley. Top with the other half of the bun.
