Cooking the Pork

    Prepare and Cook

    In a large pot, combine the pork shoulder, pork fat, onion, garlic, thyme, bay leaf, salt, pepper, and nutmeg. Add enough water to cover the meat. Bring to a boil over medium heat, then reduce to a simmer.

    Cover and let simmer for about 2 to 3 hours, or until the pork is tender and easily shredded.

    Shred the Meat

    Remove the pot from heat and let it cool slightly. Remove the pork from the pot, reserving some of the cooking liquid. Shred the pork using two forks.

Making Rillettes

    In a bowl, combine the shredded pork with some of the reserved cooking liquid. Mix until the pork is well coated and has a spreadable consistency.
