Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to create fries.

Soak the Fries
Soak the cut fries in a bowl of cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Drain and pat dry the soaked fries. Fry them in batches for about 4-6 minutes or until golden brown. Remove and drain on paper towels.

Season the Fries
Sprinkle the fries with salt to taste while they are still hot.

Mix the Ingredients
In a bowl, combine the mayonnaise, minced garlic, lemon juice, salt, and black pepper.

Stir the mixture until creamy and well combined. Adjust seasoning to taste.
