Ravioli Preparation
1. Make the Filling
In a mixing bowl, combine ricotta cheese, chopped spinach, grated Parmesan cheese, egg, salt, and black pepper. Mix well until smooth.
2. Make the Dough
In another bowl, mix flour and salt. Make a well in the center, add eggs and olive oil. Gradually incorporate the flour until a dough forms. Knead for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
3. Roll out the Dough
Divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin.
4. Assemble Ravioli
Place small spoonfuls of the filling on one sheet of dough, leaving space between each. Place another sheet of dough on top and press down around the filling to seal. Cut into desired shapes.
Cooking Ravioli and Sauce
5. Cook the Ravioli
Bring a large pot of salted water to a boil. Carefully drop in the ravioli and cook for 3-5 minutes or until they float to the surface. Remove with a slotted spoon.
6. Make the Sauce
In a saucepan, melt butter over medium heat. Add heavy cream and bring to a simmer. Stir in crumbled Gorgonzola cheese and cook until melted and creamy. Season with salt and pepper.
