    Prepare the Porcini

    Soak the dried porcini mushrooms in warm water for about 20-30 minutes until softened. Drain, reserving the soaking liquid, and chop the mushrooms.

    Cook the Fettuccine

    In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Sauté Aromatics

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent.

    Cook the Mushrooms

    Add the chopped porcini mushrooms to the skillet and cook for about 5 minutes, allowing them to brown slightly.

    Make the Sauce

    Pour in the heavy cream and reserved mushroom soaking liquid into the skillet. Stir and let it simmer for about 5-7 minutes until slightly thickened. Season with salt and pepper.

    Combine with Pasta

    Add the cooked fettuccine to the skillet, tossing to combine. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.

    Remove from heat, stir in grated Parmesan cheese and chopped parsley. Serve warm, garnished with additional Parmesan and black pepper.
