Prepare the Bacon Jam
In a skillet over medium heat, cook the bacon until crispy. Remove the bacon and set aside, leaving the fat in the skillet. Add diced onions to the skillet and cook until softened. Stir in brown sugar, bourbon, apple cider vinegar, and ground black pepper. Cook until the mixture thickens and the liquid has reduced, about 15-20 minutes. Chop the bacon and stir it back into the mixture. Set aside.

Cook the Burgers
Shape the ground beef into 4 patties. Season with salt and black pepper. Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side for medium-rare, or until desired doneness. In the last minute of cooking, place a slice of cheddar cheese on each patty to melt.

Assemble the Burgers
Toast the burger buns lightly. Place each cheese-topped patty on the bottom half of a bun, top with a generous amount of bacon jam, and cover with the top half of the bun. Serve immediately.
