Prepare the Chicken
In a bowl, combine buttermilk and hot sauce. Add chicken tenders and let marinate for at least 30 minutes.

Make the Dry Coating
In another bowl, mix together flour, cornstarch, salt, black pepper, and baking powder.

Fry the Chicken
Heat oil in a deep skillet over medium-high heat. Dip each chicken tender in the buttermilk mixture, then dredge in the dry coating. Fry in hot oil until golden brown and cooked through, about 5-7 minutes. Drain on paper towels.

Make the Sweet Potato Biscuit
Preheat the oven to 425°F (220°C). In a bowl, mix sweet potato, flour, sugar, and baking powder. Add melted butter and mix until combined. Form into biscuits and place on a baking sheet. Bake for 15-20 minutes until golden.

Assemble the Biscuit
Split the warm sweet potato biscuit in half. Spread pimento cheese on the bottom half, place a fried chicken tender on top, and drizzle with pepper jelly. Top with the other half of the biscuit.
