Pretzel Preparation

    Prepare the Dough

    In a large mixing bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5 minutes until frothy. Add the salt and flour, mixing until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.

    Shape the Pretzels

    Preheat the oil in a deep fryer or a large pot to 350°F (175°C). Once the dough has risen, punch it down and turn it out onto a floured surface. Divide into 12 equal pieces. Roll each piece into a long rope and shape into a pretzel.

    Boil the Pretzels

    In a large pot, bring 8 cups of water to a boil and add the baking soda. Carefully drop the pretzels into the boiling water, cooking 30 seconds on each side. Remove and drain on paper towels.

    Fry the Pretzels

    Fry the pretzels in the hot oil for about 2-3 minutes on each side, or until golden brown. Remove and drain on paper towels.

    Serve

    Serve warm with house pimento cheese on the side for dipping.
