Prepare the Protein
If using chicken breast, pound it to an even thickness. Season both sides of the chicken or burger patty with blackening seasoning, salt, and pepper.

Cook the Chicken/Burger
Heat oil in a skillet over medium-high heat. Cook the chicken breast for about 6-7 minutes on each side or until fully cooked (internal temperature reaches 165°F). If using a burger patty, cook for about 4-5 minutes on each side for medium doneness.

Add Cheese
During the last minute of cooking, place a slice of pepper jack cheese on top of the chicken or burger and cover the skillet to allow the cheese to melt.

Assemble the Burger
Toast the burger bun lightly. Place the cooked chicken or burger on the bottom half of the bun. Top with pico de gallo and crispy onion straws.

Serve
Spread jalapeño ranch dressing on the top half of the bun, then place it on top of the assembled burger. Serve immediately.
