Make the Sweet Potato Biscuits
Preheat the oven to 425°F (220°C). In a large bowl, combine the flour, baking powder, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the mashed sweet potatoes and buttermilk until just combined. Do not overmix.

Shape and Bake the Biscuits
Turn the dough onto a floured surface and knead gently for a few seconds. Pat into a 1-inch thick round and cut out biscuits with a biscuit cutter. Place on a baking sheet and bake for 15-20 minutes or until golden brown.

Prepare the Fried Green Tomatoes
Heat oil in a skillet. Dredge the green tomato slices in flour, then fry in the hot oil until golden brown on both sides. Drain on paper towels.

Assemble the Dish
To serve, place a biscuit on a plate, top with fried green tomatoes, crumbled bacon, and a fried egg. Drizzle with white pepper gravy and serve immediately.
